The Adventures of Broccoli Girl, Part Two

Did you miss my funny broccoli story?  Never fear, click here!!!!
Honestly, I think I like broccoli just as much as I like chocolate. But I doubt anyone would read a blog entitled “Broccoli-Covered Vegan.” Somehow, it just doesn’t have the same ring to it.
Unlike the elder George Bush, I’ve always loved this tree-like green vegetable. When I was in first grade and my doctor asked about my favorite food, I told her it was broccoli. (Later, when my sister said her favorite food was cauliflower, the doctor informed my mom she was recommending her for Mom of the Year.)
So who wants to join me for today’s Broccoli Adventure? Are you brave enough? It doesn’t require much packing– just bring along your Vitamix, food processor, hand blender, or regular blender. Let’s get going ;) .

Do your thing, Vita-mix!
.

Extra-Creamy Cream of Broccoli Soup
(Makes four super-thick and creamy servings)
Ingredients:

2 packages mushrooms, such as baby bellas (8oz packages)
2 packages broccoli (500 grams raw broccoli)
2 cups broth (I use Pacific brand mushroom broth)
2 tablespoons minced garlic
2 tsp salt, or to taste
Some of the broccoli soaking liquid (I usually use about 3/4cup, but if you want your soup even thicker, you can add less.)
1 cup non-dairy milk (or, if you want it extra creamy, switch the amounts of mushroom broth and non-dairy milk. You can also add some oil or vegan butter if you’re not a fan of fat-free soup.)

Procedure:

In a covered dish, microwave your broccoli, in water, for about 9 minutes.
Meanwhile, put the mushrooms, garlic, broth, and salt in a pot, and cook the mushrooms over medium heat while the broccoli cooks in the microwave.
Then add the broccoli to the mushrooms. Also add the desired amount of soaking liquid at this time.
Stir together, then add your milk.
Transfer the soup to your blender, or pulverize with a hand blender (lately that’s been my method-of-choice).  I only blend this a little bit, as I love it when it’s still a little chunky, not too smooth.
Eat the creamy green goodness as you thank God (or whatever higher power you believe in– god of broccoli, perhaps?) for creating such yumminess.

Fusion of two soups– Noodle Soup and Cream of Broccoli Soup (well, in reality it’s just cream of broccoli soup with pasta added. The soup made for a nice, thick pasta sauce.)
Another yumlicious add-in idea: chickpeas :)

.
Chocolate-Covered Meal(s) of the Day

Cream of Broccoli soup, with seitan and ketchup, cantaloupe, and more vegan-buttered toast (although lately I’ve been enjoying my soup with Rudi’s English muffins)
.

Toast, an apple, the soup, and a Mint Jocalat bar (yummy, but not nearly as good as the plain chocolate Jocalats)
.

Cherry-chocolate is almost as good as plain chocolate. Almost.
.
Once again, if you missed it, click for the Broccoli Girl Story I often mention in my posts.
And yes, DJ, I am usually a card-carrying member of the Clean-Plate Club ;) . Just don’t ask me how it all fits in my tiny little tummy, because I have no clue!

  1. ooh, for a second there, i expected to see broccoli and chocolate in your vitamix :) soup looks lovely! i especially like the addition of chickpeas

  2. you’re so creative!i can’t wait until I try this because I absolutely adore brocoli too!loving the jocalats although the only kind I’ve tried is mint. I can’t find any other flavor =/

  3. Nuh uh! Chocolate mint is better than plain chocolate! Hehe. Normally I think we always agree on stuff.Anyway. I also heart broccoli. This post is so awesome! I love your broccoli stories! CCV, you are too funny. I also love looking at your meal pictures. I need to start eating plain seitan with ketchup, because for some reason it sounds so appetizing when you post about it, even though you probably think it is really simple. Hehe, the “tiny tummy” comment at the end made me think of what we learned in my advanced nutrition class this week. Some stomachs can expand up to 1.5 quarts, and some even more! I bet I fit in the “even more” category, too — I can make enormous piles of veggies etc. disappear. Practice makes perfect! :) Oooh, and I’m so serious, girl, please do keep your eyes peeled for Justin’s Maple Almond Butter. Just keep looking at all the different Whole Foodses you can find…and you will be hooked.

  4. I’ve always like broccoli – I could never understand why it got such a bad rap! How can you hate the little green trees?! And love that soup recipe – mushroom soup is awesome, as is cream of broccoli. Combine them together? Yes please!

  5. is it just me or is there a small white heart in the broccoli soup picture with the jocolat bar? hehe. love your clever combo and you mom totally should win an award ;) when i was little the only way i would eat veggies is if they were doused in parmesan cheese or oil

  6. I’m just going to join in on your marveling on how you pack it all in! I *wish* I could eat as much as you, but alas my body would not love me back. Such is life, I’ll just have to live vicariously through your blog :D

  8. Yeah, sorry if I sounded sceptical, Katie!!! We all love broccoli ‘trees’ loads in our house so this soup would go down a treat!

  12. Your soup sounds great. I don’t really care for broccoli or mushrooms (scandalous, I know) but I do try to find ways to get them into my diet. Might have to make it this week since Florida is so darn cold (39 degrees in St. Pete as I type this).

  13. you keep out-doing yourself! you must have such a super fast metabolism to be able to clean ur plates, I could definitely eat like as much, but i think i would gain weight, haha

  15. Haha, you know those 4-serving “heat and eat” bags of broccoli at the grocery store? That’s like my munchie food. I’ve eaten an entire bag numerous times. Chips? Yech, gimme broccoli.

  16. I love how your recipes vary so much! one day it’s chocolate PB on the spoon the next broccali osup! That looks like a really yummy way to get the veggiesin, I’m definatly trying it! And the picture of you is so pretty, as always! P.S. How much soup does this reecipe make? =0

  23. Andrea– Woah, I totally did not see the heart until you pointed it out! I wonder what it is– steam?Laci– It makes four nice-sized portions. I don’t know exact measurements because I’ve never measured. Maybe two cups each?

  24. I often when short of time make a soup of just steamed broccoli, rice milk and black pepper liquidized. Will try your recipe as that looks really good.

  25. I love broccoli so that creamy soup looks so good. I will have to try it. I really like the one with the addition of chickpeas.By the way, I tried your ice cream out the other day and it was SO good. As it’s really hot here at the moment it hit the spot perfectly :)
