But I can’t exactly keep the “White Christmas” words intact when we experienced a 70-degree Christmas!My family has a long-standing tradition of eating soup at Christmas dinner. Christmas Eve is always a big event (the past few years, we’ve gotten together for a celebration with a few other families), so by the time Christmas dinner rolls around, everyone needs a recovery period (you know, from all the spiked eggnog they consume!). And so the “Light Soup Dinner” tradition was born.This year, we all had VEGAN soup! And it wasn’t even my idea! My meat-lovin’ dad was the one who suggested we make my grandma’s veggie soup for Christmas Dinner (recipe here).Due to the warm temperature, no one felt like hot soup. So we used the ole hand blender (that thing gets a lot of action in our house!) to pulverize the soup, and we ate it cold like gazpacho. The parents and sister just had soup (umm, well that and more eggnog!). But y’all should know me well enough by now to know that a mere bowl of soup would never suffice to tame my raging appetite. With my three-ish cups of soup, I had a baby Clementine, a Rudi’s English Muffin (new obsession alert), and some buttery cashew pieces. I also added some spinach to the soup after taking the photo. Hey, to me, that is a light meal. Twas the perfect Christmas Dinner. But I would’ve still been happy had I eaten cardboard, as the people with whom I ate really made it a stellar meal.Chocolate-Covered Words of the Day1. For the past few days I’d been feeling a bit sad because I was getting very few comments on my posts and I didn’t know why (yes, I’m odd… but simple things like blog comments really do make my day!). My family is trying to reform its ways (i.e. hot applesauce for dessert instead of apple pie w/ ice cream) and we all feel MUCH better after Christmas dinner now!!
