Christmas Cookies for the Homeless… and a Visit from the Ghost of Christmas Future

Two weeks ago, my mom read about a town, a few hours away, where the people were living in tents due to a recent hurricane. A church group was asking for cookie donations they could deliver to the area so that the affected people could at least take part in some aspect of Christmas fun. Of course we had to help. We made the following:Katie’s Grandma’s Mexican Wedding Cookies(veganized)Ingredients:1 cup margarine1/2 cup powered sugar1 teaspoon vanilla extract2 cups flour1/2 cup finely chopped pecansPowdered sugar, for rollingPreheat the oven to 325 degrees. Mix the margarine, the 1/2 cup powdered sugar, and the vanilla in a medium bowl. Combine the flour and pecans in a separate bowl. Then combine the contents of the two bowls. Shape dough into 1 inch balls and place on an ungreased baking sheet. Bake for 20 to 25 minutes until lightly browned. Roll the warm cookies in powdered sugar, then cool on a wire rack. We also made my amazing chocolate chip cookies. The recipe can be found here.Obviously, a few cookies can’t make up for not having a warm home on Christmas day, but hopefully it brought a little bit of cheer into the lives of people who’ve suffered much more than anyone should have to suffer during the Christmas season (or any season, for that matter). And now, here comes the Ghost of Chirstmas Future to give you a glimpse into my next post: More cookies coming soon!Chocolate-Covered Words of the Day1. The Blogger of the Day is Miss Erin, of the blog Care to Eat. Not only is Erin a sweetheart, but she’s also always so exuberant in her blog posts. I think she might even have more energy than me, which is saying something! I love all her silly sayings (“hi pies” is my favorite); they always make me smile. Erin, thank you so much for starting a blog, because it enabled me to “meet” a super-great girl! 2. I’m so excited about how many people have helped out by leaving comments in the comment drive! And thanks so much to everyone who’s mentioned the comment drive on their own blogs!!! If you haven’t commented yet, there’s still time. To recap, I’m going to donate 20 cents for every comment left on this post (until New Year’s Day). If you have a blog, please help me spread the word; my goal is to get at least 100 comments. EDIT: new goal is 150! Yay for surpassing 100! The money is going to a terrific charity, The Enough Project.

  2. Oh, Wedding Cake cookies, my favorite and a Christmas treat for me. Except I usually buy them from the store, however I didn’t get any this year since the company that makes them went out of business temporarily. These are on the menu for next year. Hopefully all the cookies that got delivered to the town made it feel a bit more like Christmas for them.

  3. Truly, you are amazing! How generous and sweet to donate your time and talent. . . and you are incredibly talented. I have no doubt you helped to bring a smile to many faces that way. :)

  4. aw, usually homless people get crap canned goods and the occasional rice-a-roni. How sweet of you to actually bake for them!Kelly Turnereverygymsnightmare.com

  5. It’s such a nice gesture at this time of year – sure it’s not putting a roof over their head, but everybody has a right to a little Christmas cheer at this time of year…

  12. You honestly are terrific! :D Helping out by making cookies is inspiring, and even though things aren’t as well as they hoped I’m sure cookies brought smiles to everyone. So sweet!!And yummyness( :O new rachel ray word?!) to their tummys ;) I made mexican wedding cookies this christmas as well. 14. How on earth did I miss this fabulous post?! Wow! Wow! You impress me so much. You really do have love and respect for all living creatures! You are so wonderful! And I’m totally SPEECHLESS (which basically never happens)! How sweet of you to mention me to your readers. I’m so honored Katie! You made my night SO amazing. :) THANK YOU SWEET FRIEND!

  15. P.S. I really support your cause here. The homeless are such a vulnerable population and the way our country treats them is tragic. So many are struck by mental illness and drug addiction and have been isolated due to their illness. They are worthy and capable of receiving love and I’m SO thrilled there are people like you and your family who take the time to provide it!
